Pak Choi in Pineapple Sauce with Chicken




Pak Choi in Pineapple Sauce

1 pound Chicken

about 1lb stalks of Pak Choi

2 tablespoons of Soy Sauce

1 tablespoon peanut oil

dry white wine

ginger

1 clove of garlic

1 small Can of Pineapple Chunks in their natural juices*

salt

2 teaspoons brown sugar

and pepper flakes


You need to be Quick! Have already the Veggies done and prepared

add the Chicken in to the hot wok garlic wine and ginger and the Oil set a side

Trim the ends of the pak choi stalks, then separate the leaves and rinse thoroughly. Mix together sugar an soy sauce and oil

2 Put the pak choi in to a wok of lightly salted boiling water an cook uncovered, for 3 minutes or until tender. Drain thoroughly, return the pak choi to the wok, then add the pineapple chunks with some of the juice add the sugar soy and combined with the Chicken Enjoy!.



What I liked about this recipe that it has so much yet it is so simple, try it solo with out the chicken for an awesome vegan dish add some carrots be inventive!

Define Success? Please give me the wand oh magic fairy so I can become famous an leave a Rich life near the coast, wile drinking a pina colada and hypocritically smiling at that poor ole thing that is impatiently serving my drink. Snap out of it!!!

Once in a wile is ok to rant, but when you are in the constant pursuing an not being organized not allowing your self to take one day at a time and not taking notes it becomes quite the hassle to think that you will be successful.


Why there's nothing wrong with setting up your goals up high' you must also realize that you are one an only one to succeed if you do things the right way, start thinking positive will do you good, If you feel like me sometimes overwhelmed by the vast variety of artist and art out there' well you must believe it! there's a space for you too!

Organizing your self an admitting your downfalls will be just another step, breathe an stop once in a wile to look around you, help as much as you can or be helped, it works one way or the other, an see what else could be done? mark your goals for the and during the day allowing your self to take breaks!


If you pursue those that say they have the power to transform you in to a Monster you will be setting up your self for failure, don't you know, that what comes fast!..fast it goes! Start up slowly getting to know your market an who and whom is out there! if you never heard of that persons name why would you trusted then?

Make your Self known an by that show your face an let people know whom you truly are! follow up with those whom have gave you an opportunity to share with them your Art.


I might not have a PHD or a MBA , but sure know when things are marching the right way!, the best thing God gave me is a big huge noggin to think of steps to move forward an forward! call it ambition or whatever you might call it, have always being this way, I get this part from my mother with the difference that this time It will be accomplished and finished.

Creamy Tomato-Basil Pasta with Chicken





Creamy Tomato-Basil Pasta with Chicken

Prep: 30 minutes
Makes: 4 servings

3 cups penne pasta, uncooked
¼ cup KRAFT sun-dried tomato dressing, divided
4 small boneless skinless Chicken Breasts
1 cup fat-free reduced-sodium chicken broth
½ tsp. each garlic powder & black pepper
4 oz (1/2 package) PHILADELPHIA Neufchatel Cheese, cubed
2 cups grape tomatoes
½ cup KRAFT shredded parmesan cheese
8 fresh basil leaves, cut into strips

1. Cook pasta as directed on package. Meanwhile, heat 2 tbsp. dressing in large skillet on medium heat. Add chicken, cover. Cook 5 to 6 minutes on each side or until done (165ยบ F). Remove chicken from skillet, cover to keep warm. Carefully wipe out skillet with paper towel.
2. Add remaining dressing, broth, and seasonings to skillet; cook 3 to 4 min. or until heated through. Add Neufchatel; cook and stir 2 to 3 min. or until Neufchatel is melted. Stir in tomatoes, cook 3 min.
3. Drain pasta. Add to ingredients in skillet with Parmesan and basil, mix well. Serve topped with chicken

I'ts february Chocolate Month'




I always thought Icing= Lots an Lots of sugar but not really" bling the light went on an walla' cream cheese is the in now

very simple an easy to make

1/4 Cocoa Powder or more for taste

2 Cups Powder Sugar

8 onz of Cream Cheese

and Two Tablespoons of Milk skim milk will do just fine

Just add all the ingredients adding the milk slowly until you gather all ingredients with a spatula and once they are all incorporated at low speed mix them all up' to a creamy consistency.

there' you have it an exquisite rich and chocolaty creamy frosting that oh boy' screams for Romance!

I went to my To do List today! I had some oils gathered for quite sometime, unfinished pieces that are staring at me an say you are so guilty!!' those that I had to cover for some reason because I felt the pressure of not because I couldn't, but because the time wasn't on my side to finish them.

So I say Today is the Day my Dear! and took care of her felt the love since it was started 2 years ago. I am happy that my principles as an impressionist are still there with Monet permission the painting has being finished.

I have gather enough information about him long time ago' an what it reads everything about him fascinates me! thought on giving him this little recognition. After all he kept on going even when he's sigh left him' I am proud of the painting for standing tall. It is drying now in the easel'

Simple Creamy Sauteed Pears



Creamy Sauteed Pears

About 4 pears cut in half

1 cup Mascarpone cheese

3 tab maple syrup

1 tab of Butter umhmm'



Combined Syrup an cheese in a separate bowl


About 4 pears Cut Pears in Half. core an peel place in the microwave for 7 minutes or until soften.

Melt butter add pears cook over medium-low heat for 5 minutes or until browned on the edges

Place pears dish top with Mascarpone cream . this is nice for a Romantic Night' or with the Family Enjoy!

Chicken and Noodles

Very Easy! Up to 6 Servings!


1 small Shallot

1lb of Chicken breasts

1 1/2 condensed cream of mushroom soup

3/4 cup milk

1 cup sour cream

1/2 teaspoon Sea Salt

1 Package Birds Eye Pearl Onions in a Real Cream Sauce with a delicate touch of Sherry

1 teaspoon Garlic paste or fresh minced Garlic

1 Tab of Butter

1 teaspoon Sugar

1 Tablespoon Holland House White cooking wine this one is Chablis prepared for cooking!

1 1/3 cup sliced fresh mushrooms

1 Bag of No Yolks Extra Broad

Fresh Parsley /Basil/ Cilantro for Garnish

Preparation

Cut the Chicken in Slanted pieces' Prepare the Chicken accordingly until brown takes about 8 minutes I also diluted a bit of Chicken broth wile cooking the chicken. taking the chicken out of the pan blend the chicken with the cream of mushrooms an sour cream set on the side'.


Cook an stir garlic an Shallot an butter over medium heat until lightly brown. Add sugar cook until golden stirring constantly. Stir in the wine or vinegar Add the mushrooms to it, cook an stir until lightly brown. Add the Chicken with the soup mixture wile combining the onions cook now over low heat until heated trough.

Serve over hot cooked noodles; garnish with the herbs at your preference' Enjoy Don't forget the Wine!

Sancocho!

The Best Think One can actually enjoy on a  cold, cold night' is soup indeed but I rather go for SANCOCHO!

Recipe is pretty basic an easy We are using beef chuck cut in squares that will save you some time,  except one ingredient that I tend to use in my cooking' an of course some Wine!


  •  1 tablespoon Olive Oil
  • 2 1/2 pounds beef chuck, cut into 2-inch cubes
  • Kosher salt and freshly ground black pepper
  • 1 small onion, cut into sixths
  • 2 cloves garlic, minced
  • 10 cups cold water, or chicken or beef broth, low-sodium canned
  • 6 sprigs parsley
  • cumin
  • curry powder
  •  fresh thyme
  • 2 bay leaves
  • 1-1/4 pounds medium red potatoes, quartered
  • 3 large carrots, cut into 2-inch pieces
  • 2 celery stalks, cut into 2-inch pieces
  • 1 Big Can  crushed tomatoes in basil
  • 1 tablespoon red wine vinegar
  • 1 Glass of Red Wine Makes the Beef Happy Happy!
  • 1/4 cup  splash of cooking Marsala wine
  • 1 tablespoon of Soy Sauce to seasoned the beef
  •   Corn on the cob  and  peas
  • Green bananas sliced in 1- inch pieces
  • 1 yellow or green Plantain cut in to 1/2 inches
  • 1 medium sweet potato 

 please note:  I cook with Sofrito wish is a base for all our cooking specially soups an beans I will give more info on the Recipe on another blog'
1- bunch of cilantroI also use Zafran' or Bija wish are Achiote  Annatto beans for color  Now don't look down discouraged you can easily substitute this for nice Sazon Goya with Achiote!

If you Have an Dutch Oven or  a Crock pot the better' but this could be easily done' in the Stove.

add the  Rew (Sofrito) with the meat all together until nicey nice in goes the Wine!

Heat the Dutch Oven w enough Oil to brown the meat wile at it do the seasoning' sauteed the beef uncovered until nice an brown about 8 minutes.

Set the beef a side an start adding the Wet ingredients including the herbs and garlic if you like tide them,  they are all happy add the beef in slowly' in with the raw veggies.
 re seasoned with Salt an Pepper Place the Dutch Oven  in the Oven  it takes around 1 1/2 hour

Once the meat and the veggies are  tender remove some of the fat out' Add the corn an peas place the oven on cook top for an  hour.

  If you find the beef has a some what tangy taste because of the tomatoes add some wine vinegar should be fine' just a tab.
